  • 2 cups apple juice (preferably organic)
  • Zest and juice of 1 small lemon
  • 1 tbsp apple cider vinegar
  • Pinch of salt
  • 3 tbsp pectin
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.5 tsp ground cardamom
  • 0.25 tsp ground cloves
  • 0.25 tsp ground nutmeg
  • 3 cups white granulated sugar

Instructions

  1. In a large pot, combine diced apples with apple juice, lemon zest and juice, apple cider vinegar, and a pinch of salt. Boil over medium-high heat until apples soften (about 10–12 minutes).
  2. Stir in the spices: cinnamon, ginger, cardamom, cloves, and nutmeg.
  3. Gradually add pectin while stirring to ensure even distribution.
  4. Increase heat to reach a full rolling boil that cannot be stirred down. Add sugar all at once while stirring continuously for one minute.
  5. Jar the mixture according to safe canning practices or store in the refrigerator.
