  • 4 boneless chicken breasts
  • 1 lb fresh asparagus (cut into 1-inch pieces)
  • 3 cups cubed potatoes (½-inch sides)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sharp cheddar cheese (shredded)
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium-high heat, cook diced chicken in the skillet for about 3 minutes per side.
  3. Sauté chopped onion in olive oil for about 5 minutes; add minced garlic and cook for an additional minute.
  4. In the same skillet, whisk together heavy cream, chicken broth, thyme, and paprika; simmer until slightly thickened.
  5. In a greased baking dish, layer half of the potatoes, asparagus, half of the chicken bits, and seared chicken. Pour the cream sauce over everything and top with remaining potatoes and chicken.
  6. Finish by adding shredded cheddar cheese on top. Cover with foil and bake for 25-30 minutes.
  7. Remove foil and bake an additional 15-20 minutes until golden brown and bubbly. Let rest for about 5 minutes before serving.
