  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 large egg
  • ½ cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup shredded Swiss cheese
  • 1 cup finely chopped mushrooms
  • ¼ cup ketchup
  • 2 tbsp brown sugar

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, onion, garlic, breadcrumbs, egg, milk, salt, and pepper; mix until just combined.
  3. Fold in Swiss cheese and chopped mushrooms gently.
  4. Transfer mixture to a greased loaf pan and shape into a loaf.
  5. Mix ketchup and brown sugar for the glaze; spread over the top of the meatloaf.
  6. Bake for about 60 minutes or until internal temperature reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing; serve warm.
