  • 2 1/4 tsp active dry yeast
  • 1 large egg (lightly beaten)
  • 2/3 cup mashed bananas (about 2 bananas)
  • 5 1/4 cups all-purpose flour
  • 10 tbsp unsalted butter (room temperature)
  • 3/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • For icing: 4 oz cream cheese, 4 tbsp unsalted butter, 1 cup powdered sugar, and 1 tsp vanilla extract

Instructions

  1. Warm milk to 110℉ and mix with yeast; let sit until frothy.
  2. In a bowl, combine frothy yeast mixture with beaten egg, mashed bananas, salt, sugar, and cubed butter.
  3. Gradually add flour until soft dough forms; knead gently until smooth.
  4. Place dough in a greased bowl, cover with a cloth, and let it rise in a warm spot for about an hour until doubled in size.
  5. Prepare filling by mixing brown sugar and cinnamon; roll out dough into a rectangle and spread softened butter on top.
  6. Sprinkle filling evenly over the dough along with sliced bananas; roll tightly into a log and slice into pieces.
  7. Place slices in a greased baking dish; let rise again for about 30 minutes.
  8. Preheat oven to 350℉ and bake rolls for 25-30 minutes until golden brown.
  9. For icing, blend cream cheese with butter until smooth; add powdered sugar and vanilla extract before drizzling over warm rolls.
