  • 2 heads of broccoli (about 1 and 1/2 pounds or 56 cups)
  • 1 cup dried cranberries
  • 1/3 cup roasted and salted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1011 strips of turkey bacon (cooked)

Instructions

  1. Bake the turkey bacon in the oven until crispy. Allow it to cool before chopping into bite-sized pieces.
  2. In a large bowl, whisk together 1 and 1/4 cups of mayonnaise, lemon zest, lemon juice, white grape juice vinegar, sugar, kosher salt, black pepper, dry mustard, and cayenne pepper until smooth.
  3. Cut broccoli into small florets and add them to the bowl with the dressing.
  4. Add dried cranberries, sunflower seeds, shredded cheddar cheese, chopped red onion, and most of the turkey bacon to the bowl. Stir gently until well combined.
  5. Enjoy immediately or refrigerate for at least 20 minutes to enhance flavors.
