  • 2/3 cup cooked, mashed butternut squash
  • 1/2 pound mezzi rigatoni (or small pasta)
  • 1 1/4 cup shredded cheddar cheese
  • 3/4 cup shredded smoked gouda cheese
  • 1/2 cup shredded parmesan cheese
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ground pepper
  • 1/4 teaspoon Tabasco sauce

Instructions

  1. Cook the Pasta: Boil mezzi rigatoni according to package instructions until al dente. Drain and set aside.
  2. Make the Cheese Sauce: In a medium saucepan over medium heat, melt butter. Whisk in flour until bubbly to create a roux. Gradually add milk while whisking until smooth; simmer gently. Slowly stir in cheddar, gouda, and parmesan until melted.
  3. Combine Squash & Seasonings: Add mashed butternut squash, salt, nutmeg, pepper, and Tabasco sauce to the cheese mixture. Mix well.
  4. Mix Pasta & Bake: Combine drained pasta with the cheese-squash mixture until fully coated. Transfer to a baking dish.
  5. Bake: Preheat oven to 350°F (175°C). Bake uncovered for about 20-25 minutes or until bubbly and golden.
