Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, and vegetable oil until smooth. Add eggs, cooled coffee, milk, and vanilla; blend well.
  4. Gradually combine dry ingredients with wet mixture until just mixed.
  5. Fill cupcake liners two-thirds full; bake for 18–20 minutes or until a toothpick comes out clean.
