Ingredients

Scale
  • 1 cup Greek yogurt (plain or flavored)
  • 1 cup strawberries (diced)
  • 48 pretzels
  • 2 cups dark chocolate chips
  • 1 tbsp coconut oil (for melting)

Instructions

  1. In a bowl, mash together the Greek yogurt and diced strawberries until well combined.
  2. On a parchment-lined baking tray, arrange 28 pretzels. Top each with about 1 tablespoon of the yogurt mixture, then place another pretzel on top to form sandwiches.
  3. Freeze the pretzel sandwiches for at least 2 hours until firm.
  4. Melt the dark chocolate chips with coconut oil in a microwave-safe bowl, heating in increments until smooth.
  5. Dip each frozen pretzel sandwich into melted chocolate and let excess drip off. Optionally sprinkle with crushed peanuts before placing back on parchment paper.
  6. Freeze again until chocolate is set.
