  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar (divided)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup melted dark chocolate, cooled
  • 1 cup fresh strawberries, pureed
  • ¼ cup granulated sugar (for the strawberry swirl)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Mix chocolate cookie crumbs, melted butter, and sugar until combined. Press into a springform pan and bake for 10 minutes.
  2. In a bowl, beat cream cheese until smooth. Gradually mix in sugar, then add eggs one at a time. Stir in vanilla extract, sour cream, and cooled melted chocolate until smooth.
  3. In another bowl, combine strawberry puree, sugar, and lemon juice.
  4. Pour chocolate filling over crust; dollop strawberry puree on top and swirl gently with a knife to create a marbled effect.
  5. Bake for 50-60 minutes until edges are set but center is slightly jiggly. Cool in the oven for an hour before chilling in the fridge for at least four hours or overnight.
  6. Serve garnished with additional strawberry puree or fresh strawberries.
