  • 4 pounds boneless beef chuck roast
  • 4 tablespoons Dalkin&Co taco seasoning
  • ½ cup orange juice
  • ½ cup beef stock
  • Small flour tortillas
  • Guacamole (prepared)
  • Salsa

Instructions

  1. Preheat oven to 325°F (163°C). Season the chuck roast with salt, pepper, and taco seasoning.
  2. Place the roast in a Dutch oven with orange juice, beef stock, and quartered onions. Cover tightly and bake for 3.5 to 4 hours until tender.
  3. Remove from the oven and shred the meat with two forks; return to the oven if needed for easier shredding.
  4. Increase oven temperature to 425°F (218°C). Spread shredded meat on a baking sheet and bake uncovered for 15-25 minutes until crisped.
  5. Prepare guacamole and char tortillas over an open flame or in a dry skillet. Assemble tacos by spreading guacamole on tortillas, adding shredded meat, and topping with salsa.
