  • 1 cup cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a bowl, whisk together lime juice, olive oil, chopped cilantro, minced garlic, cumin, chili powder, salt, and pepper.
  2. Marinate flank steak in the mixture for at least 30 minutes in the fridge.
  3. Cook rice according to package instructions.
  4. Warm black beans in a saucepan over medium heat.
  5. Prepare corn by boiling or sautéing until tender.
  6. Preheat grill or grill pan to medium-high heat and cook the marinated steak for about 4-5 minutes per side.
  7. Let the steak rest before slicing thinly against the grain.
