  • 20 Oreos
  • ¼ cup unsalted butter (melted)
  • 32 ounces full fat block cream cheese (softened)
  • 1 cup granulated sugar
  • 8 ounces full fat sour cream
  • 1 Tablespoon vanilla extract
  • 4 large eggs
  • 3 Tablespoons espresso powder
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy whipping cream
  • ½ Tablespoon granulated or powdered sugar

Instructions

  1. Preheat oven to 325°F (163°C). Combine crushed Oreos and melted butter; press into a springform pan.
  2. Beat softened cream cheese and sugar until smooth. Add sour cream, vanilla extract, eggs, and espresso powder; mix well.
  3. Pour filling over crust and bake for about 80 minutes until edges are set. Cool gradually in the oven.
  4. Prepare ganache by melting chocolate chips with whipping cream until smooth. Whip remaining cream with sugar and espresso powder.
  5. Once cooled, pour ganache over cheesecake and top with whipped cream. Chill for at least four hours before serving.
