Ingredients

  • 1 cup non-dairy yogurt (plain and unsweetened)
  • 2 tablespoons protein powder (optional)
  • 1/4 cup cashew butter (or any nut/seed butter)
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (or honey)
  • 1 1/2 cups chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. In a mixing bowl, combine all the ingredients except the mini chocolate chips. Stir until smooth.
  2. Line a baking sheet with parchment paper and scoop dollops of the mixture onto it, leaving space between each scoop.
  3. Freeze for at least 1 hour until solid.
  4. While freezing, melt chocolate chips and coconut oil together until smooth.
  5. Dip each frozen yogurt bite into the melted chocolate and place back on the parchment-lined sheet.
  6. Return to the freezer for another 30 minutes until the chocolate hardens.
