  • 1 ½ cups diced bell pepper (red and green)
  • 1 pint cherry tomatoes (halved)
  • 1 cup English cucumber (diced)
  • ½ cup finely diced red onions
  • â…“ cup chopped fresh cilantro
  • 3 tablespoons avocado oil
  • ¼ cup lime juice (or lemon juice)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder

Instructions

  1. Cook corn by boiling for about 5 minutes or grilling until tender. Let it cool slightly before cutting off the kernels.
  2. While cooling, dice the bell peppers, cherry tomatoes, cucumber, red onions, and cilantro.
  3. In a bowl, whisk together the dressing ingredients: avocado oil, lime juice, apple cider vinegar, honey, Dijon mustard, and spices.
  4. Combine cooled corn kernels with chopped vegetables in a large mixing bowl. Pour dressing over and toss gently to coat.
  5. Serve immediately or chill for about 30 minutes for enhanced flavor.
