  • Egg (beaten)
  • Breadcrumbs
  • Green onions
  • Red bell pepper
  • Fresh lemon juice
  • Old Bay seasoning
  • Egg roll wrappers
  • Vegetable oil (for frying)

Instructions

  1. Prepare the Filling: In a large bowl, mix lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, beaten egg, breadcrumbs, green onions, red bell pepper, lemon juice, Old Bay seasoning, salt, and pepper until well combined.
  2. Assemble the Egg Rolls: Place an egg roll wrapper on a clean surface. Add about 2 tablespoons of the crab filling in the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly from bottom to top.
  3. Frying Time: Heat vegetable oil in a deep skillet to 350°F (175°C). Carefully add egg rolls without crowding them. Fry until golden brown and crispy on all sides (about 4-5 minutes per batch).
  4. Drain & Serve: Transfer cooked egg rolls onto paper towels to drain excess oil. Serve warm with tartar sauce or aioli.
