  • 1.25 cups granulated sugar

  • 1/2 cup oil
  • 1 tsp vanilla extract
  • 1/2 cup lemon juice
  • 3/4 cup milk
  • 2.5 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp fresh lemon zest
  • 1/4 tsp salt
  • 2 tbsp poppy seeds

Instructions

  1. Preheat oven to 170°C (340°F) and line two springform pans with parchment paper.
  2. In a bowl, cream sugar and butter until fluffy. Add eggs one at a time, mixing well after each addition. Stir in oil, milk, and lemon juice until combined.
  3. Sift together flour, baking powder, baking soda, and salt; gently fold into the wet mixture along with poppy seeds and lemon zest.
  4. Divide batter between prepared pans and bake for 25-27 minutes until golden brown. Cool completely before removing from pans.
  5. Whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
