  • 34 pounds bone-in short ribs
  • 1 large onion, diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 3 cloves garlic, crushed
  • 2 tablespoons tomato concentrate
  • 2 cups apple vinegar
  • 3 cups beef stock
  • 2 bay leaves
  • 1 sprig of thyme
  • 1 sprig of oregano

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat and sear the short ribs until browned on all sides. Remove and set aside.
  2. In the same pot, sauté diced onion, celery, carrots, and crushed garlic until softened.
  3. Stir in tomato concentrate and cook briefly before adding apple vinegar and beef stock. Scrape up any browned bits from the bottom.
  4. Return short ribs to the pot with bay leaves and herbs.
  5. Cover and simmer on low heat for about 2.5 hours until the meat is tender.
