  • 2 tablespoons honey (or maple syrup)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1 cup dark chocolate chips (for coating)
  • 1 teaspoon coconut oil (optional)

Instructions

  1. In a bowl, mix the Greek yogurt, peanut butter, honey, and vanilla until smooth. Fold in the mini chocolate chips.
  2. Line a baking sheet with parchment paper. Scoop tablespoon-sized portions of the mixture, flatten into discs, and place on the sheet.
  3. Melt dark chocolate chips with coconut oil in a microwave-safe bowl at 30-second intervals until smooth.
  4. Dip each frozen disc into the melted chocolate, tapping off excess before returning to the sheet. Add optional toppings while wet.
  5. Freeze again for 15-20 minutes until the chocolate sets.
  6. Store in an airtight container in the freezer and let sit at room temperature for 2-3 minutes before serving.
