  • ÂĽ cup unsalted butter (melted)
  • ÂĽ cup neutral oil
  • 2 teaspoons vanilla extract
  • Âľ cup molasses
  • ½ cup light brown sugar (packed)
  • 1 large egg (room temperature)
  • 1 cup sour cream (room temperature)
  • ÂĽ cup coarse sugar (for topping)

Instructions

  1. Preheat your oven to 425°F.
  2. In a large mixing bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and cloves.
  3. In another bowl, mix melted butter, neutral oil, vanilla extract, molasses, and brown sugar until combined; then add egg and sour cream until smooth.
  4. Gently fold wet ingredients into dry ingredients until just mixed.
  5. Divide batter among a greased or lined muffin tin and sprinkle coarse sugar on top if desired.
  6. Bake for 5 minutes at 425°F; then reduce temperature to 350°F without opening the door and bake for an additional 14–15 minutes until a toothpick comes out clean.
  7. Allow muffins to cool in the pan for about five minutes before transferring them to a wire rack.
