  • 1 lb sirloin steak or steak tips, cut into bite-sized pieces
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp Dijon mustard (optional)
  • 1 tsp paprika
  • 1 package (20 oz) cheese tortellini (fresh or refrigerated)
  • ½ cup shredded mozzarella (for topping)
  • 2 tbsp chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Season the steak pieces with salt and black pepper. In a skillet over medium-high heat, heat olive oil and sear the steak for about 2–3 minutes per side until browned.
  2. In the same skillet, melt butter over medium heat. Add minced garlic and sauté briefly. Stir in flour to make a roux and cook for about a minute. Gradually whisk in milk and beef broth until smooth. Add shredded cheddar cheese, Dijon mustard, and paprika until creamy.
  3. Cook tortellini according to package directions but undercook slightly to maintain shape after baking. Drain and toss with olive oil.
  4. Grease a baking dish and combine tortellini, seared steak, and cheese sauce in the dish. Mix well and top with shredded mozzarella.
  5. Bake uncovered for about 20–25 minutes until bubbly and golden brown. Garnish with chopped parsley before serving.
