  • 1 tablespoon granulated sugar
  • 1 cup plus 2 tablespoons milk
  • 1/4 cup sour cream
  • 1 large egg
  • 3 tablespoons melted butter (plus more for cooking)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Coarsely ground black pepper

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. In another bowl, mix milk, sour cream, egg, and melted butter until smooth.
  3. Gently fold wet ingredients into dry ingredients until just combined.
  4. Heat a skillet over medium heat and melt half a tablespoon of butter. Pour in about one-third cup of batter for each pancake.
  5. Cook until bubbles form on the surface (about 3-4 minutes), then flip and sprinkle cheddar, mozzarella, and Parmesan on one pancake before flipping the other on top.
  6. Cook until both sides are golden brown and cheese is melted (approximately another 3 minutes).
  7. Serve warm with maple syrup drizzled on top.
