  • 2 Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh lime juice
  • ½ teaspoon Paprika
  • ½ teaspoon Ground Cumin
  • ¼ teaspoon Chili Powder
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Dried Oregano
  • A pinch of salt and pepper (or to taste)
  • 1 Cup Cooked Brown Rice
  • 1 tablespoon Lime Juice
  • 2 Cups Mixed Greens
  • ½ Cup Black Beans
  • ½ Cup Canned corn, drained (or grilled)
  • ⅓ Cup Cherry Tomatoes (cut into quarters)
  • 1 Small Avocado (sliced)
  • ½ Red onion (diced)
  • 2 tablespoons Greek yogurt
  • 1 Jalapeno Pepper (sliced)
  • A small handful of chopped cilantro (plus more to garnish)

Instructions

  1. Marinate the chicken by mixing olive oil, lime juice, and spices in a bag and adding the chicken. Let it sit while you prep.
  2. Grill the marinated chicken on medium-high heat for 5-7 minutes per side until cooked through.
  3. Toss cooked brown rice with lime juice and cilantro.
  4. Assemble bowls by layering mixed greens, sliced grilled chicken, black beans, corn, avocado, cherry tomatoes, Greek yogurt, and red onion.
  5. Garnish with cilantro and sliced jalapeños before serving.
