Grilled Chicken Caprese is a vibrant and delicious summer dish that effortlessly combines juicy, balsamic-marinated chicken with creamy mozzarella, sweet cherry tomatoes, and aromatic basil.   • 1.5 pounds boneless skinless chicken breasts
  • 2 tbsp extra virgin olive oil (plus more for salad)
  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1/2 tsp sea salt
  • 1 pound cherry tomatoes (halved)
  • 6 ounces fresh mozzarella pearls (drained and halved)
  • 8 large leaves of basil
  • Flaked Maldon finishing sea salt to taste
  • 2 pounds zucchini

Instructions

  1. 1. Marinate the Chicken: In a glass container, combine chicken breasts, olive oil, balsamic vinegar, maple syrup, and sea salt. Mix well and marinate in the refrigerator for at least 2 hours or overnight.
  2. 2. Prepare the Grill: Preheat your grill to medium-high heat (around 400°F).
  3. 3. Make the Caprese Salad Topping: In a bowl, mix halved cherry tomatoes and mozzarella pearls with olive oil. Chiffonade basil leaves and add to the mixture.
  4. 4. Grill the Chicken: Place marinated chicken on the grill for about 8-10 minutes per side until fully cooked (internal temperature should reach 165°F).
  5. 5. Grill Zucchini: Add zucchini halves to the grill alongside chicken during the last few minutes of cooking.
  6. 6. Rest & Serve: Let grilled chicken rest for a few minutes before slicing. Serve topped with Caprese salad mixture and drizzled with balsamic reduction.
