  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • ¼ cup Korean BBQ rub
  • 1/4 cup mayo
  • 12 tablespoons sriracha (depending on your heat tolerance)
  • 1 teaspoon sesame oil
  • 1 teaspoon low sodium soy sauce
  • Sandwich buns or rolls
  • 1 whole seedless cucumber (sliced into 1/8 inch rounds)
  • 1 cup rice vinegar
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 cup ice
  • extra water (to top off container)

Instructions

  1. Prepare the marinade by mixing sesame oil, garlic, ginger, soy sauce, gochujang, brown sugar, honey, rice vinegar, and Korean BBQ rub.
  2. Marinate the chicken thighs for at least 30 minutes in the refrigerator.
  3. Preheat your grill to medium-high heat and grill the chicken for about 6-7 minutes per side until fully cooked.
  4. Mix mayonnaise with sriracha for a spicy spread.
  5. Assemble your sandwich with grilled chicken and toppings on toasted buns.
