  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 8 ounces fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions

  1. Preheat your grill to medium heat.
  2. In a bowl, combine sliced zucchini, red bell pepper, and red onion with olive oil, salt, pepper, oregano, and basil. Toss well to coat.
  3. Grill the seasoned veggies for about 5-7 minutes until tender and charred.
