  • 4 ciabatta rolls
  • 8 oz fresh mozzarella cheese
  • 1 medium zucchini
  • 1 red bell pepper
  • ½ red onion
  • 8 oz portobello mushrooms
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey or maple syrup
  • 1 clove garlic
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 2 tbsp fresh basil leaves

Instructions

  1. Wash and slice zucchini, bell pepper, onion, and mushrooms. Place them in a bowl.
  2. Whisk together olive oil, balsamic vinegar, honey (or maple syrup), minced garlic, salt, and pepper. Toss half the marinade with the vegetables and let rest for 5 minutes.
  3. Preheat grill to medium-high heat. Grill vegetables for about 3-4 minutes per side until tender-crisp.
  4. Brush ciabatta rolls with remaining marinade and grill cut-side down for 1-2 minutes until crisp.
  5. Layer mozzarella on each roll's bottom half and cover to melt cheese for about 30-45 seconds.
  6. Add grilled vegetables on top, drizzle with any leftover glaze, sprinkle torn basil leaves, then close the sandwiches.
  7. Grill sandwiches for an additional minute to meld flavors before serving.
