Ingredients

Scale
  • 500 g guavas (for compote)
  • 80 g granulated sugar (for compote)
  • 1 tbsp lime juice (for compote)
  • 300 g Tennis biscuits (for crust)
  • 150 g unsalted butter (melted, for crust)
  • 700 g cream cheese (for filling)
  • 250 g castor sugar (for filling)
  • 4 extra large eggs (for filling)
  • 1 tsp vanilla extract (for filling)
  • 200 ml whipping cream (for filling)
  • 200 g guavas (for decoration)

Instructions

  1. Prepare the guava compote: In a saucepan over medium heat, combine chopped guavas, sugar, and lime juice. Cook until softened and sauce-like.
  2. Make the crust: Crush Tennis biscuits into fine crumbs and mix with melted butter. Press firmly into a springform pan.
  3. Mix the cheesecake filling: Beat cream cheese and castor sugar until smooth; add eggs one at a time along with vanilla extract. Fold in whipping cream gently.
  4. Bake: Pour filling over the crust and bake in a preheated oven until set but slightly jiggly in the center. Cool completely before refrigerating.
  5. Top: Once chilled, spread the guava compote over the cheesecake and decorate with fresh guavas.
