  • 4 cups cooked chicken breast
  • 16 oz frozen corn
  • 1 red bell pepper
  • 1 red onion
  • 1 jalapeno
  • 1/2 cup light mayo
  • 1/2 cup plain nonfat Greek yogurt
  • 1 lime (zested and juiced)
  • Fresh cilantro
  • Scallions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the red bell pepper, red onion, and jalapeno into bite-sized pieces.
  3. Spread the vegetables and frozen corn on a sheet pan, spray with olive oil, and sprinkle with salt. Roast for 20-25 minutes until tender.
  4. In a large bowl, whisk together light mayo, Greek yogurt, lime zest and juice, cumin, paprika, salt, and chili powder.
  5. Once cooled slightly, chop the roasted veggies and combine them with the chicken in the dressing bowl.
  6. Add chopped cilantro and scallions; toss gently to combine.
  7. Serve chilled or at room temperature.
