  • 1/2 teaspoon Italian seasoning

  • 1 small shallot, finely chopped
  • 2 cloves garlic, crushed
  • 1/4 cup chopped sun-dried tomatoes (not in oil)
  • 1 cup low-sodium chicken broth
  • 1/2 teaspoon chili crunch oil or a pinch of red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons grated Parmesan cheese
  • 1/2 cup blended cottage cheese
  • 3 tablespoons chopped fresh basil

Instructions

  1. Season chicken with salt and pepper.
  2. Sauté shallot and garlic in olive oil until fragrant.
  3. Sear chicken in the same skillet for 2–3 minutes per side; add onion powder and Italian seasoning.

  5. Cook on LOW for 4–6 hours until chicken is fully cooked.
  6. Stir in cornstarch slurry for thickening 30 minutes before serving.
