  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic (about 3 cloves)
  • 11/2 cups diced yellow onion (1 onion)
  • 1 cup diced carrots (about 3 large carrots)
  • 1/4 cup flour
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon dried thyme
  • 3 cups diced baby gold potatoes (unpeeled, about 19 ounces)
  • 2 cups chicken broth
  • 3 cups whole milk
  • 1 large bay leaf
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. If using fresh corn, cut kernels off the cobs to measure out 4-1/2 cups. Set aside.
  2. In a large pot over medium-high heat, melt the butter. Add the onions, carrots, and garlic. Season with salt and pepper; sauté for about 5–7 minutes until softened.
  3. Sprinkle flour over the vegetable mixture and stir for one minute. Add diced potatoes, Italian seasoning, and thyme; stir for another 30 seconds.
  4. Gradually pour in chicken broth while scraping up any browned bits at the bottom of the pot. Stir in milk and add bay leaf along with reserved corn cobs if using. Bring to a gentle simmer.
  5. Cover and reduce heat to medium-low; let simmer for about 20–25 minutes until thickened.
  6. Remove corn cobs and bay leaf. Stir in fresh corn kernels; cook for an additional 5–7 minutes until tender.
  7. Mix in heavy cream; adjust seasonings to taste before serving hot.
