  • 227 grams dark chocolate (chopped)
  • 100 grams egg whites (room temperature)
  • 60 grams granulated sugar
  • 110 grams almond flour (sifted)
  • 190 grams powdered sugar (sifted)
  • 10 grams unsweetened cocoa powder (sifted)
  • 120 grams heavy cream
  • 66 grams egg whites (room temperature)
  • 133 grams granulated sugar
  • 57 grams dark chocolate (melted)
  • mini dehydrated vegan vegan marshmallows

Instructions

  1. Prepare the ganache by heating the heavy cream until simmering. Pour it over chopped dark chocolate and let sit for one minute. Stir until smooth and set aside to cool.
  2. In a bowl, mix sifted almond flour, powdered sugar, and cocoa powder. In another bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add granulated sugar and continue beating until stiff peaks form. Gently fold in dry ingredients.
  3. Pipe small circles of batter onto parchment-lined baking sheets. Let them rest for 30-60 minutes until they form a skin.
  4. Preheat oven to 300°F (150°C) and bake for about 15 minutes until firm.
  5. Once cooled, assemble macarons by spreading ganache on one shell and topping with another shell adorned with mini marshmallows.
