  • 3 large eggs, room temperature
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon vanilla extract
  • 1 cup whipped cream
  • 2 maraschino cherries
  • 1/4 cup chocolate shavings (or chopped chocolate)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a springform pan.
  2. For the brownie base, mix melted butter and sugar until combined. Stir in eggs and vanilla extract. Fold in flour, cocoa powder, salt, baking powder, and chocolate chips. Pour into the pan and bake for 20-25 minutes.
  3. For the cheesecake filling, beat softened cream cheese until smooth. Gradually add sugar and vanilla; mix in eggs one at a time followed by sour cream and heavy cream.
  4. Pour cheesecake mixture over cooled brownie base; bake at 325°F (163°C) for 55-60 minutes until just set but slightly jiggly.
  5. Allow it to cool in the oven with the door ajar for an hour before refrigerating overnight.
  6. For the hot fudge sauce, melt chocolate chips with heavy cream and butter until smooth; stir in vanilla extract.
  7. Serve chilled cheesecake with hot fudge sauce drizzled on top.
