  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup old fashioned oats
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla
  • 1 tablespoon molasses or honey
  • 1/2 cup powdered sugar, sifted
  • 1 to 2 tablespoons whole milk
  • 1/4 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8 x 8 inch baking pan with parchment paper.
  2. In a medium bowl, melt the butter and let it cool slightly.
  3. Pulse oats in a food processor until broken into smaller bits.
  4. In another bowl, combine pulsed oats, flour, baking soda, cinnamon, and salt.
  5. Mix melted butter with granulated and brown sugar until combined.
  6. Add egg, vanilla, and molasses to the butter-sugar mixture; stir well.
  7. Fold in dry ingredients until just combined.
  8. Spread the mixture into the prepared pan and bake for 20-24 minutes until golden brown.
  9. Allow to cool before icing.
