  • 6 large eggs
  • 4 strips turkey bacon, cooked and crumbled
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon sugar
  • Pinch of salt
  • Pinch of black pepper
  • Smoked paprika for garnish
  • Fresh chives, chopped (optional)

Instructions

  1. Place eggs in a saucepan, cover with cold water, and bring to a boil over high heat.
  2. Remove from heat once boiling, cover with a lid, and let sit for 10-12 minutes.
  3. Transfer eggs to an ice bath for about five minutes before peeling.
  4. Slice eggs in half lengthwise and scoop yolks into a bowl.
  5. Mash yolks and mix with mayonnaise, mustard, vinegar, sugar, salt, and pepper until smooth.
  6. Stir in most of the crumbled bacon (reserve some for garnish).
  7. Spoon or pipe the yolk mixture back into egg whites.
  8. Garnish with reserved bacon bits and smoked paprika; chill before serving.
