  • 1 cup peach preserves
  • Yellow food coloring (optional)
  • 1/2 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon
  • Red food coloring (optional)

Instructions

  1. Cream the softened butter and sugar in a large bowl until light and fluffy. Add eggs and both extracts, mixing until well combined.
  2. In another bowl, whisk together flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined.
  3. Chill the dough in the refrigerator for about 30 minutes to make it easier to handle.
  4. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Take about 1 tablespoon of dough, flatten it in your palm, place a teaspoon of peach preserves in the center, fold it over, and roll into a ball.
  6. Bake for 12-15 minutes until lightly golden on the bottoms. Allow cooling before rolling in a cinnamon-sugar mix.
