- 2 cups Boneless Skinless Chicken Thighs (cut into bite-sized pieces)
- 1/4 cup Plain Greek Yogurt
- 1/2 cup Sour Cream
- 2 tsp Minced Garlic
- 1/4 tsp Ground Ginger
- 1/2 tsp Cumin
- 1 tsp Garam Masala
- 1/2 tsp Turmeric
- 2 tbsp Butter
- 1/2 Onion (chopped)
- 2 tsp Ginger Paste
- 1/2 tsp Ground Coriander
- 8 ounces Tomato Sauce
- 1 cup Unsweetened Coconut Milk
- Marinate the chicken in Greek yogurt, sour cream, garlic, ginger, cumin, garam masala, turmeric, salt, and pepper for at least 30 minutes.
- Heat oil in a skillet over medium-high heat and sear the marinated chicken until golden brown on both sides.
- Remove chicken; sauté chopped onions in butter until soft.
- Add coriander, garlic, cumin, turmeric, garam masala; cook briefly to release flavors.
- Stir in ginger paste, tomato sauce, and coconut milk until combined.
- Return chicken to the skillet; simmer for about 20 minutes to meld flavors.
