  • 1 lb ground turkey or chicken
  • 4 cups vegetable stock
  • 2 cloves garlic, minced
  • 2½ cups marinara sauce
  • 2 tbsp butter
  • ½ cup heavy cream

Instructions

  1. In a large pot over medium-low heat, melt the butter. Add diced onion and minced garlic; season with salt and pepper. Sauté until translucent.
  2. Increase heat to medium and add ground turkey or chicken. Cook until browned, breaking apart with a spatula.
  3. Drain excess grease; stir in vegetable stock and marinara sauce. Bring to a boil.
  4. Lower heat to simmer; stir in cream and ricotta cheese. Simmer for 30–45 minutes while stirring occasionally.
