  • 4 Medium Bell Peppers
  • 1 1/2 pounds Ground Beef
  • 1/2 Medium Onion (chopped)
  • 1 tsp Garlic Powder
  • 1 tsp Chili Powder
  • 2 tbsp Tomato Paste
  • 1/2 cup Beef Broth
  • 1 tsp Dijon Mustard
  • 2 tsp Apple Cider Vinegar
  • 1 cup Cheddar Cheese (shredded)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium-high heat, brown the ground beef with chopped onions until cooked through.
  3. Reduce heat to medium; stir in garlic powder, chili powder, beef broth, tomato paste, Dijon mustard, apple cider vinegar, salt, and pepper. Simmer until thickened.
  4. Cut the tops off the bell peppers and remove seeds. Place them cut side up in a baking dish.
  5. Fill each pepper with the meat mixture and top with shredded cheese.
  6. Cover with aluminum foil (tenting it) and bake for 30 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
