  • 8 tbsp unsalted butter
  • 1 3/4 cups sugar
  • 2 large eggs
  • 2 1/4 tsp pure vanilla extract
  • 1 1/4 cups whole milk
  • 1/2 cup extra-strong lavender Earl Grey tea (cooled)
  • 16 tbsp unsalted butter (for frosting)
  • 4 cups confectioner's sugar (sifted)
  • 1 tsp whole milk (for frosting)
  • 1 tsp pure vanilla extract (for frosting)
  • 1/8 tsp salt (for frosting)
  • 1/4 cup extra-strong lavender Earl Grey tea (for frosting, cooled)
  • 1/4 tsp purple food color (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cupcake pans with baking cups.
  2. In a bowl, sift together flour, baking powder, and salt.
  3. Cream the unsalted butter and sugar together until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Gradually mix in the wet ingredients: vanilla extract, milk, and cooled tea.
  6. Alternate adding the dry mixture with the wet mixture until just combined.
  7. Scoop batter into prepared cupcake liners about two-thirds full.
  8. Bake for approximately 18 minutes or until a toothpick comes out clean.
  9. For frosting, beat butter with confectioner's sugar until fluffy; add milk, vanilla, tea, and salt.
  10. Frost cooled cupcakes before serving.
