  • 8 oz linguine or angel hair pasta
  • 1 lb large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Zest and juice of 1 large lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in salted boiling water according to package directions until al dente. Reserve half a cup of pasta water before draining.
  2. Preheat your grill or grill pan over medium-high heat.
  3. Toss shrimp with 1 tablespoon of olive oil, salt, and pepper. Grill for 2-3 minutes on each side until pink and opaque. Set aside.
  4. In a skillet, heat remaining olive oil over medium heat. Add minced garlic and sauté until fragrant.
  5. Add asparagus to the skillet and cook until bright green and crisp-tender (about 3-4 minutes).
  6. Combine drained pasta with asparagus in the skillet. Stir in lemon zest, juice, and grilled shrimp, mixing gently until warmed through.
  7. Adjust seasoning with reserved pasta water if needed. Serve garnished with fresh parsley.
