  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 1 to 2 tablespoons fresh lemon zest
  • 1 large egg (room temperature)
  • 2 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon kosher salt
  • 1/3 cup freeze-dried blueberries (chopped)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a stand mixer, combine sugars and lemon zest, massaging zest into sugars.
  3. Add butter and mix until light and fluffy (about 3 minutes).
  4. Mix in egg and vanilla until combined.
  5. In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt; gradually add to wet mixture.
  6. Gently fold in freeze-dried blueberries.
  7. Chill dough for about 30 minutes.
  8. Portion dough onto baking sheets, roll in sanding sugar, and bake for 8-9 minutes until edges are golden.
