  • 16 full-size graham crackers (or 2 cups graham cracker crumbs)
  • 16 ounces cream cheese (at room temperature)
  • 2 large eggs (at room temperature)
  • 1/2 cup granulated sugar
  • 2 teaspoons finely grated lemon zest
  • 3 tablespoons freshly squeezed lemon juice
  • 2 cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine melted butter, graham cracker crumbs, sugar, and salt. Press into the bottom of an 8×8-inch baking dish.
  2. Bake the crust for about 10 minutes until golden brown. Allow it to cool.
  3. In another bowl, beat together cream cheese and sugar until smooth. Add eggs one at a time, then mix in lemon zest, lemon juice, vanilla extract, and salt until combined.
  4. Fold in one cup of blueberries and pour the mixture over the cooled crust.
  5. Bake for 25-30 minutes or until the center is set but slightly jiggly. Cool completely before refrigerating for at least two hours.
  6. Cut into squares, dust with powdered sugar if desired, and serve.
