  • 1 tbsp olive oil
  • 2 tbsp unsalted butter (divided)
  • 1 small shallot (finely diced)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth (warmed)
  • ½ cup grated Parmesan cheese
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 8 oz cooked lobster meat (chopped)
  • Salt and black pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. In a large skillet over medium heat, combine olive oil and one tablespoon of butter. Sauté diced shallot and minced garlic until soft and fragrant.
  2. Stir in Arborio rice and cook for about two minutes until lightly toasted.
  3. Gradually add warmed broth, one cup at a time, stirring frequently until absorbed before adding more.
  4. After about 20-25 minutes and all the broth has been absorbed, fold in chopped lobster and remaining tablespoon of butter. Finish with lemon juice, zest, Parmesan cheese, salt, and pepper.
  5. Serve immediately garnished with fresh parsley.
