  • 3 tbsp fresh lemon juice

  • 3 cloves garlic (minced)
  • 1 tbsp fresh rosemary (chopped or 1 tsp dried)
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/2 tsp red pepper flakes

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, parsley, salt, pepper, Dijon mustard, honey, and red pepper flakes to create the marinade.
  2. Place chicken thighs in a resealable bag or shallow dish and pour the marinade over them. Ensure they are well-coated. Refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Remove chicken from the marinade and discard any excess liquid. Grill each thigh for about 6-7 minutes on each side until they reach an internal temperature of 165°F (75°C).
