  • 5 boneless and skinless chicken breasts, trimmed of excess fat
  • 1/2 cup butter, divided
  • Salt, to taste
  • Freshly ground pepper, to taste
  • 2 lemons, zested and juice reserved
  • 3 cloves garlic, minced
  • 1 red onion, cut into wedges
  • 1 cup chicken stock
  • 1 cup parmesan cheese, freshly shredded or grated
  • 1 cup heavy cream
  • Parsley, for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a skillet, melt 1/4 cup of butter and sear the chicken for 2-3 minutes on each side until golden brown.
  3. Transfer the seared chicken to a slow cooker.
  4. Deglaze the skillet with chicken stock and lemon juice, then pour this over the chicken.
  5. Add onion wedges, garlic, lemon zest, and remaining butter to the slow cooker.
  6. Cook on high for 3-4 hours or low for 6 hours until chicken is tender.
  7. Remove chicken and stir in parmesan cheese and cream into the broth until smooth.
  8. Serve the chicken topped with sauce and garnish with parsley.
