  • Kosher salt and freshly ground black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons extra-virgin olive oil
  • 1 large yellow onion
  • 2 stalks celery
  • 1 medium carrot (optional)
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh chopped thyme
  • 4 cloves garlic
  • 1 cup apple cider
  • 1/2 cup pure maple syrup
  • 2 cups beef stock (or vegetable stock)

Instructions

  1. Season short ribs with salt and pepper, then dust with flour.
  2. Heat olive oil in a large pot over medium-high heat and sear the ribs until golden on all sides.
  3. Remove ribs and sauté onions, celery, carrot, tomato paste, garlic, and thyme in the same pot until fragrant.
  4. Deglaze the pot with apple cider, scraping up any bits stuck to the bottom.
  5. Stir in maple syrup and stock; return short ribs to the pot.
  6. Cover and simmer on low heat for about 210 minutes until tender.
  7. Serve warm alongside your favorite sides.
