  • 2 lbs chicken breast
  • 1 cup full-fat Greek yogurt
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano
  • Fresh cracked pepper
  • 2 tablespoons extra virgin olive oil
  • ½ medium yellow or white onion, chopped
  • 2 cups Basmati rice
  • 3 cups chicken broth
  • 1 large cucumber, chopped
  • 4 roma tomatoes or 2 large beefsteak tomatoes, chopped
  • 1 tablespoon extra virgin olive oil
  • ½ cup loosely packed mint or parsley, chopped
  • 4 slices naan or pita bread
  • 8 oz. hummus

Instructions

  1. In a large bowl, mix Greek yogurt, olive oil, garlic, lemon juice, tomato paste, paprika, salt, oregano, and pepper to create the marinade.
  2. Coat chicken breasts in the marinade and refrigerate for at least 30 minutes or overnight for maximum flavor.
  3. Sauté chopped onions in olive oil until translucent. Add rinsed Basmati rice; toast slightly before adding chicken broth. Cook until rice is fluffy.
  4. Preheat grill to medium-high heat and cook marinated chicken for about 6-7 minutes per side until fully cooked.
  5. Assemble bowls with rice as the base topped with grilled chicken skewers, cucumbers, tomatoes, herbs, hummus on the side, and warm naan or pita.
