  • 1 lb boneless skinless chicken breast (cut into 1-inch chunks)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice (plus zest for more lemon flavor)
  • 2 garlic cloves, minced
  • 2 tsp oregano
  • 1/2 tsp paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 whole wheat pitas (thin)
  • 1 cup Persian cucumbers, chopped
  • 1 cup cherry tomatoes, chopped
  • 1 cup red bell pepper, chopped
  • 1/4 cup red onion, diced
  • 2 tbsp parsley, chopped (or mint, basil, dill, etc.)
  • 1/2 cup feta cheese, crumbled (optional)
  • 1 lemon, juice
  • Salt and pepper
  • 1/2 cup tzatziki

Instructions

  1. Marinate the chicken in olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper for 15 to 45 minutes.
  2. Prepare the Mediterranean salsa by mixing chopped cucumbers, tomatoes, bell pepper, red onion, parsley (or herbs of choice), feta cheese (if using), lemon juice, salt, and pepper in a bowl.
  3. Cook the marinated chicken in a skillet over medium-high heat until golden and cooked through (about 6-9 minutes total).
  4. Warm whole wheat pitas on a griddle.
  5. Assemble tacos by filling each pita with chicken and topping it with salsa and tzatziki.
