  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup red onion, thinly sliced
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  2. Add chopped spinach and cook for 2-3 minutes until wilted. Season with salt, pepper, and oregano; stir in red pepper flakes if desired.
  3. Lay out tortillas; on one half of each tortilla, spread the sautéed spinach mixture evenly.
  4. Top with crumbled feta cheese, shredded mozzarella, and sliced red onions.
  5. Fold the other half of each tortilla over the filling. In the skillet, lightly coat with cooking spray or olive oil.
  6. Cook quesadillas for about 2-3 minutes on each side until golden brown and crispy.
  7. Remove from skillet, let cool slightly, then cut into wedges and serve warm.
