  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup cherry tomatoes
  • 1 cucumber
  • ½ red onion
  • ¼ cup fresh herbs (parsley or dill)
  • 1 cup Greek yogurt (or coconut yogurt for dairy-free)
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp honey (optional)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Marinate the sirloin steak in olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper for at least 30 minutes.
  2. Prepare the tzatziki by mixing Greek yogurt with grated cucumber, lemon juice, minced garlic, dill, salt, and pepper.
  3. Whisk together vinaigrette ingredients: olive oil, lemon juice, honey (optional), minced garlic, oregano, salt, and pepper.
  4. Sear the marinated steak in a hot skillet for about 4-5 minutes on each side until browned; let it rest before slicing.
  5. In each bowl, layer cooked grains first and top with sliced steak and fresh veggies. Add tzatziki sauce and vinaigrette to taste.
